Easy-to-make apple cake wins Presbyterian Manor recipe challenge

Parsons Presbyterian Manor hosted a recipe challenge recently, open to all residents and staff. Competition was fierce, but Jean Quilty’s Fresh Apple Cake came out on top.

Jean, who is 95 years old, has been a member of our community since 2020. For the competition, she submitted a favorite family recipe that she often made for special occasions.

“It reminds me of all the Christmases that I made this recipe and watched the family enjoy eating it,” she said.

Our amazing dining services staff will be making Fresh Apple Cake so we can all enjoy it. Thanks to Jean for sharing her recipe so we can make it as part of our own special gatherings.

JEAN QUILTY’S FRESH APPLE CAKE

4 cups chopped, unpeeled apples

2 cups sugar

3 cups flour

2 teaspoons baking soda

1 teaspoon salt

2 eggs, beaten

2 teaspoons vanilla

1 cup chopped nuts

1 cup coconut

1 cup vegetable oil

Stir apples and sugar together and let sit for 30 minutes to an hour.

Mix the flour, baking soda and salt, then add the apple mixture.

Combine remaining ingredients.

Pour into a greased Bundt pan or a 9x13-inch baking dish.

Bake in a 350-degree oven for 40-50 minutes.
